When you bite into a samosa, chapati, bhajia, vitumbua or maandazi, you're tasting the echoes of Indian and Arabic influence, with a beautifully blended infusion of Tanzanian ingredients and flair. You’ll recognise the names pilau rice, masala chai, coconut rice, mishikaki, tandoori chicken, biriani — but take that first bite and you’ll quickly realise: it’s Tanzanian at heart.
